They are part of the entertainment industry and must both excite and motivate their customers to expend their disposable income at the restaurant. Jon thought momentarily and then told Jason that he was a vegetable grower and would love to supply him with whatever he needed.

Jason excused himself, returned to the kitchen, brought out the availability list from the city purveyor, and gave it to Jon. He told Jon that if he could provide the restaurant with anything on the list, he would purchase it from him and at the same prices that he was paying the city purveyor.

Jon glanced down the list with great optimism but quickly realized that his farm production plan was not compatible with the restaurant's needs, so he thanked Jason and headed back to his truck to make the trek back home.

The minute drive back to the farm gave Jon time to process the lessons he learned at the produce auction, the farmers' market, and the restaurant.

Jon realized for the first time that if he and his wife were going to be successful, they would need to be "different" and that only if they were able to own this niche in the market would they be successful. Jon limped along that first year and worked off-farm after the growing season to make ends meet.

When December came around, Jon pulled out the crumpled availability list that he obtained at the restaurant and decided that if they were going to be successful, they were going to have re-brand themselves and change the way they operated their business.

When Jon developed his production plan for the next year, he axed the string-weave tomatoes and replaced them with heirlooms and tomato varieties that were tinged in purple, striped, or black.

He planned to grow specialty beans, red lettuce, golden beets, specialty cucumbers, fingerling potatoes, and any other vegetable that may excite the buyers he was trying to reach. The following year at Jon's first trip to the produce auction, he was met by a few snickers from the other growers when they saw his boxes of unusually shaped and odd-colored tomatoes.

The next week, Jon went to his first farmers' market and brought an array of specialty produce. After the farmers' market tear-down, Jon decided to revisit the farm-to-table restaurant, hoping to run into Jason again.

This time he was met by a server and was provided with the day's features. After enjoying each tasty morsel of food, he asked the server somewhat sheepishly if Jason still worked there.

She proceeded to go back into the kitchen to retrieve him. The young gentleman that Jon had met before strode out from the kitchen and instantly remembered Jon. Jon complimented Jason on the meal and told him that he had something for him and gave Jason a piece of paper containing all of the unusual produce offerings that he and his wife were growing that year.
